Caramelized Shallot Omelet

1 Shallot
1 Egg
1/4 Cup of Habenero Cheese or Cheddar Cheese
2 Anchovies or Anchovy paste (optional)
Salt and Pepper

Dice shallot and saute in olive oil and butter.  Mash anchovies and saute with shallots.  Whisk egg and add to frying pan when shallots have caramelized. Reduce heat to low when egg has set and add cheese.  After the cheese melts slide the omelet on to a plate.

Anchovies or anchovy paste optional but it adds a great pop of umami.
